Almond Goji Berry Energy Bars

Ingredients:

  • 350g almonds
  • 100g goji berries
  • 70g desiccated coconut
  • 5 tbsp coconut oil
  • 3 eggs
  • 50g pitted dates
  • Salt
  • 50g dark chocolate melted
  • 20g sunflower seeds

Method:
1. Preheat oven to 180ยฐC.
2. Add 300g of the almonds and 70g goji berries in a blender along with the desiccated coconut, 3 tbsp of the coconut oil, eggs, dates and salt. Pulse until it forms a coarse mixture.
3. Transfer mixture into a baking tray greased roughly 2 tbsp coconut oil and smooth out with the back of a spoon.
4. Bake for 20-25 minutes.
5. Set aside to cool for 20 minutes.
6. Top with the remaining almonds, goji berries, melted dark chocolate, and sunflower seeds.
7. Cut to desired size.
