Chicken And Waffle Bake

  • 4 chicken breasts
  • 100 grams flour
  • 1 teaspoon chilli powder
  • ½ teaspoon garlic powder
  • ½ teaspoon mustard powder
  • Salt & pepper
  • 9 eggs
  • 250 millilitres milk
  • 50 millilitres maple syrup (plus more to serve)
  • Butter (for greasing)
  • 8-10 waffles
  • 100 grams cheddar cheese

1. Cut chicken breasts into small nuggets. Add chilli powder, garlic powder, mustard powder, salt, and pepper to the flour and mix thoroughly.
2. Coat the nuggets in the flour mixture, then 2-3 beaten eggs, then panko breadcrumbs, and place on a baking tray. Season with more salt and pepper and bake for 20 minutes at 200°C.
3. While the chicken is baking, mix together 6 eggs, milk, maple syrup, salt, and pepper. Set aside.
4. Grease a square ovenproof dish and tear your waffles into chunks for the bottom layer. Add the cooked chicken on top, then a layer of cheddar cheese. Repeat these layers, then pour over the egg mixture. Bake for 45 minutes at 160°C.
5. Serve with maple syrup.
