Coronation Chicken Pasta Salad

Ingredients:

  • 2 chicken breast filets
  • 1 tablespoon olive oil
  • 1 ½ cups shell pasta
  • Salt to taste
  • Pepper to taste

Coronation Dressing:

  • 5 tablespoons mayonnaise
  • 2 tablespoons mango chutney
  • 2 teaspoon mild curry powder
  • 1 teaspoon cinnamon
  • Juice from ½ a lime
  • Salt to taste
  • Pepper to taste
  • 3 apricots, sliced
  • Parsley to taste

PREPARATION
1. Preheat oven to 400˚F/200°C.
2. Rub the chicken breasts with olive oil and season with salt and pepper.
3. Bake for 25 minutes, or until the chicken is cooked through.
4. Shred the chicken with two forks.
5. Cook the pasta al dente and let cool.
6. Mix the coronation dressing ingredients in a bowl and season with salt and pepper. Add the pasta, shredded chicken, and apricots, and mix.
7. Garnish with parsley
