Oil Free Stir Fry

For people trying to cut down on oil consumption – this one’s for you! This stir-fry was fresh and delicious, and you wouldn’t be able to tell that no oil was used.

Ingredients:

  • 1 Large Cucumber
  • 1/3 Cup Water
  • 1/3 cup Cashew Nuts (broken)
  • 2 Cloves Garlic (minced)
  • Small bunch Coriander
  • 2 inch thumb ginger (finely grated)
  • 1 Chilli (Deseeded and minced)
  • 1 Carrot (finely sliced)
  • 6 Tender Stem Broccoli Stalks (sliced, longways)
  • 2 Baby Sweet Corn (Quartered, longways)
  • 3 tbsp Soy Sauce
  • 1 tbsp Maple Syrup
  • Juice of 1 lime
  • 1 Red Pepper (Finely sliced)
  • Handful Green Beans
  • 3 Scallions (finely sliced)
  • Big handful kale (well shredded)
  • 3 Nests Wholewheat Noodles

To Serve:

  • 2 tbsp Cilantro Leaves (Finely sliced)
  • 1 tbsp Chia Seeds
