One-Pot Jambalaya Pasta

Serves 4

INGREDIENTS

  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 chicken breast, chopped
  • 75 grams chorizo
  • 1 red pepper
  • 100 grams chopped tomatoes
  • 1 tablespoon paprika
  • 1 tablespoon onion salt
  • 1 tablespoon garlic powder
  • 1 tablespoon cajun seasoning
  • 1 tablespoon ground cumin
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 500 millilitres chicken broth
  • 225 grams spaghetti
  • 75 grams prawns
  • Fresh coriander (optional)

PREPARATION
1. Fry the onions and garlic in a large pan for about a minute over a medium heat, then add chicken and fry until it starts to brown.
2. Next add chorizo, red pepper, and chopped tomatoes.
3. Add all of the dried spices, then pour in the chicken broth and add spaghetti.
4. Allow the spaghetti to soften for a minute in the broth before gently pushing it down so that is fully covered in the liquid.
5. Bring to a boil, then lower the heat to allow the liquid to simmer. Cook for 7 minutes.
6. Next, add the prawns and stir for another 2 minutes. (By this point, most of the liquid will have reduced and the pasta should be al dente.)
7. Take off the heat and sprinkle with coriander.
8. Enjoy!
