Pad Thai Salad

For the thai dressing:

  • 3 tablespoons soy sauce
  • 3 tablespoons sesame oil
  • 1 tablespoon fish sauce
  • 1 tablespoon honey
  • 1 garlic clove, crushed
  • 1 tablespoon chilli flakes
  • 1 lime, juiced
  • 1 large cucumber
  • 1 large carrot
  • 2 chicken breasts, shredded
  • 3-4 spring onions
  • Bunch of coriander
  • Bunch of mint
  • Crushed peanuts (to serve)

PREPARATION
1. In a small bowl, whisk together the Thai dressing ingredients. Set aside.

2. As a substitute for noodles, use a vegetable peeler to peel long ribbons of cucumber and carrot. (You can use a spiralizer if you prefer).

3. Using scissors, snip in the spring onion, coriander, and mint. Add shredded chicken (or any meat you prefer).

4. Pour over the Thai dressing and toss.

5. Serve with crushed peanuts.
